Guaranteed Good The Best Cajun Food Recipes

The Cajun people are descendants of Acadian immigrants deported to Louisiana from Canada. Their food is known for being simple yet flavorful and spicy, and also makes use of local Louisiana ingredients. Among the best-known and simplest Cajun recipes are:

Blackened Redfish
2 lbs Redfish fillets
2 tsp White pepper
2 tsp Paprika
2 tsp Salt
2 tsp Garlic powder
2 tsp onion powder
2 tsp Thyme
1 cup Melted butter

Combine all the spices. Heat a skillet, preferably a cast iron one. Dip fish in butter, and sprinkle with spices. Place in hot skillet and let cook until the underside looks dark brown, flip and cook for the same amount of time on the other side. Serves 2.

Jambalaya
1 cup Diced onion
1 cup Diced bell pepper
1 cup Chopped celery
1 lb Sliced Andouille
2 cloves Minced garlic
1 cup Chicken stock
2 tbsp Bacon grease
4 cups Cooked rice
3 tbsp Flour
1 16oz Can tomato sauce

Brown Andouille in bacon grease and remove. Add onion, bell pepper, garlic and celery and cook for 1 minute or until soft. Add flour. Cook until flour is golden brown. Add chicken stock and tomato sauce, cook until thick. Add Andouille sausages. Cook for another minute and then serve over rice. Serves 2.
