Here are three items you&#8217;ve got to know how to work with if you really want to make the claim you &#8216;know how to cook Cajun.&#8221;<br />The Holy Trinity &#8211; We speak, of course, of celery, onions and bell peppers, the foundation of any true Cajun dish. They come together (usually with garlic) to make a fragrant base for sauces, soups and even bouillabaisse.<br />Roux &#8211; Yes, roux. It&#8217;s merely flour and butter cooked together but there&#8217;s a real art to it. Don&#8217;t skimp on the butter &#8211; you need the liquid fats to cook the flour and remove that gluey taste to help give body to soups and ettoufes.<br />Alligator &#8211; Okay, so unless you live in the deep south you&#8217;re not likely to have easy access to this critter but if you&#8217;ve never sliced and fried up some alligator tail you don&#8217;t know what you&#8217;re missing. If you want to enjoy some great comfort food all you have to do is sit down to an amazing southern dish. Below is a great southern Cajun recipe for crawfish pie.<br />
Ingredients:<br />
2 cups crawfish tails<br />
Crawfish fat<br />
3 1/2 tablespoons of cooking oil<br />
1 chopped onion<br />
3 tablespoons of butter <br />
 cup chopped celery<br />
Salt <br />
Red pepper<br />
1 tablespoon of green onion<br />
1 garlic glove<br />
1 pinch of nutmeg<br />
 cup of tomato sauce mixed with water<br />
4 tablespoons<span id="more-9"></span> of corn starch<br />
2 tablespoons of parsley<br />
 Four pastry lined pie plates<br />
Cook<br />
1. Cook celery, onion and garlic in cooking oil. Cook until tender. Dish out half the cooked mixture.<br />
2. Add tomato sauce, water and crawfish fat into the cooked mixture and cook on medium. <br />
3. When it begins to boil slowly add cornstarch and water until it thickens. <br />
4. Season with nutmeg, thyme, red pepper and salt.<br />
5. Remaining onion mixture to a saucepan and add crawfish tails and butter. Cook for 4 minutes.<br />
6. Combine sauce, crawfish, green onion and parsley.<br />
7. Add mix to pastry, fold edges together and bake for 5 minutes at 450 degrees.</p>

<p>Blackened Redfish<br />

1 cup Chicken stock<br />
2 tbsp Bacon grease<br />
4 cups Cooked rice<br />
3 tbsp Flour<br />
1 16oz Can tomato sauce</p>
<p>Brown Andouille in bacon grease and remove. Add onion, bell pepper, garlic and celery and cook for 1 minute or until soft. Add flour. Cook until flour is golden brown. Add chicken stock and tomato sauce, cook until thick. Add Andouille sausages. Cook for another minute and then serve over rice. Serves 2.</p>

<p>Certain things are characteristic to the Cajun flavor. One is a Cajun Seasoning, either commercial or home made. If you make it at home be sure to use cumin, paprika, garlic and cayenne in proportions you like. Oregano is good too. You can make it with salt or salt free.</p>
<p>A second addition is the Cajun Trinity of cooking. That is roughly chopped bell peppers, celery and onions. Add to meats, stews,<span id="more-7"></span> rice and gumbo. Gumbo is a stew that includes chopped okra.</p>
<p>Third, thicken soups and sauces with a roux. That is wheat flour browned in butter. It has a rich flavor when stirred into liquids.</p>
<p>Quick examples you can make are burgers on the grill: add Cajun seasoning to the meat you use as well as putting it in the barbecue sauce you baste with. Dirty rice or red beans and rice start with basic cooked rice to which you add Cajun seasoning, meat, or red beans. Use shrimp or sausage in your rice dishes. The most authentic is andouille sausage. </p>

<p>Mix together the following dry ingredients:<br />
